Dionysus Plate

Adapted from The Pump Energy Food (which I recommend highly as healthy and tasty)

Ingredients

  • 1 skinless chicken breast
  • 3 tablespoons chopped cucumber
  • 2 tablespoons chopped tomato
  • 1 tablespoon minced onion
  • 1/4 cup tahini dressing (see below)
  • 2 tablespoons soy sauce (to taste)
  • 1 tablespoon hot sauce (to taste)
  • 2 oz whole wheat pasta (e.g., fettucccine)

Directions

  • Cook pasta in boiling water, as typical
  • Broil or otherwise cook chicken breast, then chop into bite-sized pieces
  • In saucepan, combine all other ingredients. Simmer until the tomatoes break down into sauce, about 15 minutes if I recall correctly.
  • Combine cooked pasta, chicken bites, and sauce mixture.

Tahini dressing

Blend the following:

  • 1 cup cooked Cannelli beans (ie great northern beans)
  • 1.5 cups water
  • 1/4 cup tahini paste (this stuff)
  • 1/4 cup white wine vinegar
  • 1/4 cup lemon juice
  • 2 teaspoons lemon zest
  • 1/4 cup parsley
  • 1 clove crushed garlic
  • 1 minced shallot
